Padres wines are fullbodied ,vigorous,ruby red with intense aromas offering s store of simple but unique fragrances. They are full and velvety,of gret strcture and aromatic persistence.
Grappe varieties: grapes are selected with extreme care, BOVALE, in order to achieve the terrain's maximum expression.
Poduction area: Anglona (SS), Sardinia, Italy.
Soil composition: soil which tends to e loose and medium textured with a good limestone base. Drainage is excellent through the year.
Altitude: 150 metres above sea level.
Climate: always well-ventilated. Temperate andwrm in the summer, with decisive day-night temperature swings. it is never harsh during winter, becoming milder thanks to marine currents.
Production for hectare: 7000-8000kg/ha.
Vine training sistem: spurred cordon.
Plante density: 4000 plants/ha.
Harvest date: second week of september.
Vinification: the fully rypened grapes are harvested manually, destemmed, crushed and let to macerate in temperature controlled tanks. During this phase frequent but brief pumpover takes place, favouring the passage of more noble and sweet compounds into the must.
Aging : 8-9 months in stainless steel tanks.
Development in the bottle: 7-10 years.
Colour: very intense ruby red.
Bouquet: intense fruit overtones of blackberry,black cherry and myrtle.Fragrant and enveloping, it offersvdelicate aromatic edges of spices, eucalyptus and dried flowers.
Taste: full and velvety, of great aromatic strcture and persistence.
Food and wine pairing: medium to fully ripened cheeses, cured hams, speck, roasted read meats, suckling pig, wild boar, barbecued filled, hare,lamb. Best served in capacious glasses at temperature of 18 ° C.
